We were lucky enough to get a few bags of albacore from a mate, that coupled with a glut of tomatoes made for a great dish. And this is so simple, even the most gourmet challenged amongst us can make it
Italian Style Tuna
Couple of good sized albacore fillets
500g (roughly) tomatoes
4 anchovie fillets
Heat a pan. add some oil and fry the anchovies. Add the chopped tomatoes, olives and basil. cook for about 5 minutes. Pour the tomatoes into a oven dish and place in a warm oven. Add the tuna fillets with a liberal amount of pepper to the fry pan. Sear lightly on both sides and add to the tomato mixture.
Leave it in the oven for about 10 minutes while you arrange the table, pour yourself a drink and break up the bread. I added sauteed silverbeet, you could add spinach, or you could leave the greens out altogether... You need the bread to soak up the juices...
